Château Hermitage Saint-Martin - Côtes de Provence

Created in the 11th century by the Saint Victor Abbey, the original estate was then called Château Saint-Martin la Toche. It was much later, during the Second World War, that it was destroyed and then abandoned. In 1999, Guillaume Enzo Fayard, a young passionate winemaker from a longtime Provence wine family who also owns Chateau Sainte Marguerite, bought and entirely rejuvenated the estate. He also renamed it Château Hermitage Saint-Martin. There are almost 30 hectares in total, 17 of which are under vine.
There he grows mainly Grenache, Mourvedre and Syrah (along with some Cabernet Sauvignon, Cinsault and Rolle). The certified organic vineyards are grown on stony clay and limestone soils at the foot of the Cuers rock formations. These vines benefit from their southeast exposure and extremely favorable growing conditions, enjoying an incredible 265 days of sun per year).
Fayard combines the ancient winemaking traditions with modern technology and know how. He employs a gentle hand in the winery just as he does in the vineyards, fining and filtering only with organic products, and not using any oak on his wines. The domaine’s wines are even certified vegan (i.e. free of additives of animal origin) for those truly committed few.
Château Hermitage Saint-Martin Côtes de Provence Rosé “Cuvée Enzo”
This quintessential Provençal rosé is made from a blend of Grenache, Syrah and Cinsault from hillside vineyards with stony clay-limestone soils. It undergoes a cold skin contact maceration before pressing and fermentation in temperature-controlled stainless-steel tanks, and is aged on its lees in the same tanks. It is fined and filtered before bottling. This red-fruit and floral scented, pale-colored rosé has an elegant, mineraled palate, making it perfect for warm-weather cuisine like grilled chicken, vegetables, sushi, tapenades, flatbreads or cold pasta salads. Certified organic and vegan.
